Innovative STR Cask Finishing
 
The journey continues with a second maturation in specially treated STR casks—ex-red wine casks that have been shaved, toasted, and recharred. This method, pioneered by the late Dr. Jim Swan, a consultant for the distillery, enhances the interaction between the whisky and the wood, allowing the spirit to draw rich red fruit flavors and temper the tannins typically found in red wine casks. This treatment highlights the flavors embedded within the wood, bringing them to the forefront in a striking display of craftsmanship.
 
Rooted in Local Heritage
 
Named after the scenic Filey Bay, visible from the distillery window, this single malt is deeply rooted in its Yorkshire surroundings. The bespoke bottle design reflects the textures of the farm, soil, beach, and sky, embodying the essence of the region. An homage to its origins, each bottle bears a secret phrase on its underside: "Proudly Made of Yorkshire," celebrating the local pride and spirit.
